Do you have to use a popover pan when making popovers?
No, you do not have to use a popover pan to make popovers. The popover pan is designed to make the tallest popovers. If you do not have a popover pan, a regular muffin pan will work just fine! This is actually what I use. I don’t invest in special equipment unless I think I need to.
Should I let popover batter rest before cooking them?
I have made popovers both ways and honestly, I have not been able to tell the difference. If you are in a pinch for time, or maybe you just don’t feel like waiting, I think it will be just fine if you skip this step.
Why are my popovers dense and not hollow?
Here are a few reasons why your popovers are dense and not popping over like they should:
- The batter is too thick – If you find that your batter is thick, and not liquidy thin, then you need to add more milk. Steam is what is makes these popovers rise, so it’s important to make sure you have enough liquid in your batter.
- Your oven isn’t hot enough – Your oven must be hot! The hotter your oven is, the higher your popovers will rise. When your oven is set high, the popovers steam more quickly, causing your popovers to rise more! If you want a precise measurement of temperature, you can always invest in an oven thermometer.
- Your milk and eggs are not warm – When your eggs and milk are not warm, your popovers are less likely to pop.
- You didn’t heat your pan – I like to stick my muffin pan in the oven when I preheat it. That way the batter doesn’t cool.
What ingredients do you need to make popovers?
You only need a few ingredients to make a delicious, crisp popover. Here is the list:
- 2 eggs warmed or room temperature
- 3/4 cups milk warmed
- 1/2 tsp salt
- 2 tbsp melted butter
- 3/4 cup flour
This recipe makes about 11 popovers. If you need more, double the recipe!
How to make popovers
Place your eggs into a bowl of hot water. This will warm the eggs quickly instead of waiting hours for the eggs to come up to room temperature.
Preheat your oven to 450 degrees, place your empty muffin pan into the preheating oven.
Next, pour the milk into a sauce pan on low heat. Also place the butter into the pan, and begin to mix until the butter melts. As soon as the butter melts, remove the pan from the heat.
Pour the warmed milk and butter mixture into a bowl. Mix in the warm eggs.
Add the flour and salt to the bowl. Whisk in the flour and salt until no lumps remain.
Once the batter is finished, remove the muffin pan from the oven. Begin pouring the batter into the muffin pan, pouring until each cup is half way full. I like to put the batter in a liquid measuring cup to make the batter easier to pour.
Once the batter is poured into the cups evenly, place the muffin pan in the center of the oven.
Bake at 450 degrees for 15 minutes. After the 15 minutes are up, reduce the heat to 350 degrees and bake for 5 more minutes.
Once finished baking, serve immediately with butter, jam, or even herbs and cheese!
